Ingredients - serves 12
serving size - 1 cup
- 1 cup corn
- 1 cup cut green beans
- 1 15-oz can kidney beans
- 1 15-oz can garbanzo beans
- 1 15-oz can black beans
- 1 cup diced red onion
- ½ cup balsamic vinegar
- ¼ cup water
- 2 tbsp Dijon mustard
- 1 tbsp dried basil
- 1 tbsp olive oil
- 1 tsp sugar
- 1 tsp thyme
- ¼ tsp salt
- ¼ tsp ground pepper
- 2 cloves garlic, minced
Directions
Rinse and drain corn, green beans, kidney beans, garbanzo beans and black beans. Combine remaining ingredients in a bowl. Add corn and beans and toss.
Marinate 4 hours, stirring occasionally.
